Layout GMP dan Informasi Nilai Gizi Abon Ikan Mas di UMKM Mina Rejeki Salatiga

Mina Rejeki SMEs is one of the producers of carp floss in Salatiga. The strategic location of this SMEs, close to the city center and distribution routes, presents a great opportunity to expand the market, including the potential to penetrate the export market as demand increases for hygienic and high-quality processed fishery products. However, this SMEs still faces several issues that hinder its competitiveness with similar products, particularly regarding the layout and the absence of nutritional information on the packaging. The goal of this community service activity is to assist the SMEs in designing the layout and conducting a product analysis of the carp floss, enabling the SMEs to provide nutritional information on the packaging. This activity is carried out in several stages, including partner situation analysis, preparation of the GMP layout, nutritional value testing of the product, and dissemination of the test results and layout. The outcomes of this activity are a completed GMP layout and the results of the nutritional analysis of the carp floss product. The analysis shows that the carp floss does not yet meet SNI 7690.1-2013, especially in terms of protein content. Therefore, improvements in the formulation of the carp floss are necessary to comply with the required standards.
